Course content:
Practical knowledge of quality assurance and sustainability: requirements for raw materials as well as for horticultural products under the aspect of resource conservation, assessment of quality depending on various factors (e.g. cultivation conditions, storage, degree of processing). Application of standards, sensory analyses as well as chemical and non-destructive measuring methods for quality assessment, taking into account external and internal quality parameters. Recording and assessment of both value-giving parameters and antinutritive substances.
Expected previous knowledge:
Knowledge of the basic rules and theories of chemical, biochemical and physical processes. Participation in LVA 952320 "Quality in Horticulture" is recommended.
Learning outcomes:
The students are able to characterise and purposefully apply the most important methods of quality assessment under the aspect of sustainability, whereby the chosen analytics are selected with regard to the type of ingredient and the plant matrix. They are able to assess, interpret and draw conclusions about quality according to the requirements of the end user (consumer, industry) despite its complexity. They master the use of the most important equipment and measuring methods in the quality assessment of horticultural products. They can properly carry out the inspection of horticultural products both before harvesting and afterwards and thus make correct decisions on the choice of harvesting time and marketing strategy.
Teaching and learning methods:
Exercises, discussion and demonstration exercises.
20 h attendance time in the exercises, 60 h preparation and follow-up incl. literature study, calculations and report writing.
